The shape of the butchers knife is designed for breaking down, portioning meat and working around bones rather than hacking through them as the edge is still relatively thin despite its imposing size.

It's also surprisingly useful for those who rock chop as the rounded shape is great for going through larger heaps of ingredients easily. Please note that for the cutting edge measurement, we estimate the total length and on this knife the flat part is approximately 160mm and the curved part around 130mm.
