A perfect knife for those who prefer a slicing motion over rocking when cooking, the stylish combination of half kurouchi hammer finish, exposed aogami super cutting edge and striking morado wood handle work wonderfully and the kiritsuke is a great all rounder despite its sometimes more traditional use being for working with fish.


Great sharpness out of the box thanks to the aogami super core, you'll find this one performs well straight away and will retain its edge very well. 


The kurouchi finish tapering down to expose the aogami super core along the cutting edge and engraved kanji combine nicely with an oval morado wood handle. 


A smooth fit and finish on the oval handle and well balanced it's easy to use although at a push we might have liked a slightly smoother finish around the heel/chiol where you might find it a little rough but nothing particularly worrying.


The edge retention of the AS steel will be good and should retain its edge well for as long as you look after it. 

Value for money

For the price, you're getting a well made knife using Aogami Super steel for the cutting edge and a lovely looking morado handle with a fit and finish worthy of knives at a higher price point. If you're looking for an AS steel then we'd definitely recommend this.

What you get

All knives sold in a protective black card presentation box and the blades come in a plastic sheath wrapped in Japanese newspaper from the day they were ready to leave the workshop.
