The smallest of the HD2 range, this petty will handle all your small jobs with precision and speed. It is razor sharp and is brilliant for all those in-hand jobs or fiddly prep jobs in the kitchen.

The iconic HD2 knives by Konosuke are well known for being laser thin and razor sharp. HD2 is a mono steel and for those familiar with the GS+ (a 3 layer steel) the comparison between the two is that these are a little less stainless the the GS+ but will hold an edge for longer, this is due to having more chromium in the steel.

Please note: The handle ferrule is different on the petty to the other gyutos in the range.

First Impressions

These knives are well known for their performance, they are light, thin and really really sharp.


Sleek and stylish they will suit perfectly if you're not a fan of intricately designed knives, they have an octagonal ho wood (with a buffalo ferrule) or a single piece laurel wa handle which can be used in either hand.

In Hand

As is usual with Konosuke, the fit and finish is always top notch and the knives sit very comfortable in the hand.


The steel is a mono steel that is semi-stainless so there is a chance it will patina slightly but nothing like a pure carbon blue steel for example.

They are laser like knives that are incredibly thin so are best suited to softer veg and meat/fish where the knife can show off its incredible sharpness.

A Japanese knife should never be used to cut through bones anyway but no hacking through butternut squash either, use your Western knife for that!

Ease of Care

Being semi-stainless they should be kept dry between use, don't put in a dishwasher and everything should be fine!

We'd recommend pairing your knife a Konosuke saya to keep it safe if you're not storing it on a magnetic rack or block.
