We've paired Yoshikane's incredible blade with a one-off stabilised black ash burl and contrasting black g10 spacers featuring a superbly subtle orange and blue hue running through the handle.

This exceptional handle is made and fitted in the UK by custom handle maker @letshandlethis.

First Impressions

An excellent sharpness out of the box and is nimble in hand thanks to the reasonably thick tapered blade and well finished white #2 core.


The nashiji finish on the stainless cladding paired with the high polish of the white #2 core really is stunning. It's subtle and understated which we love and contrasted with a dark wenge wood handle we think it looks wonderful. 

As the edge develops a patina over time and darkens it will continue to provide a lovely contrast with the stainless cladding.

In Hand

The gyuto is very comfortable with a slightly thicker than average spine near to the handle and a balance point just around the heel make cutting easy and enjoyable.


White #2 clad in stainless is a popular combination for a good reason - it's easy to sharpen and retains an edge well and with minimal extra care it's going to last you a lifetime. 

Ease of Care

It's a reactive core steel so will develop a patina over time but simple care and maintenance of rinse and dry after use and you'll have no problems. 

Our Verdict

For the money you're definitely getting a great knife, it's very well made and finished and looks superb.

Yoshikane Hamono have a long established and worthy reputation for creating high quality knives and this is one of them.
