A perfect mid sized petty. Nimble, light and ideal for working with smaller ingredients.


You will be able to achieve a really fine, sharp edge with white #2 steel, it won't hold its edge as long as some other steels but for most people who aren't prepping veg all day you won't really notice, just give it a hone when you feel the edge going and that will keep the edge in tip top condition.

Ease of care

White #2 steel is really easy to sharpen so maintaining it should be a breeze. This being a reactive knife you will need to wipe and dry carefully after each use though and over time a patina will develop.

What you get

A beautiful midnight blue box with Anryu San's signature in silver on the top, inside is a soft stepped velvety interior, the blade is wrapped in a single sheet of paper and is held safely with a block of foam.
