A long petty for those who love the low profile but prefer the increased length and versaility over a similar length chef knife.

First Impressions

The White #2 is impressive out of the box, they're a nicely balanced knife across the range and are impressively thin behind the edge giving you great cutting performance.

Beauty

The White #2 core paired with the kurouchi finish on the soft iron cladding and magnolia handle is a classic look and one that we always enjoy.

The kurouchi finish is smooth and tapers down through the migaki finish and then down to the polished core steel cutting edge.

In Hand

The knives are all pretty thick along the spine near the handle but taper quickly to a more consistent width along the majority of the blade before thinning out quickly at the top. 

That thicker area near the handle where you would typically hold the knife in a pinch grip offers a nice feel in hand and it contributes to the feeling of it being a "significant" knife in terms of weight but without it actually feeling too heavy but if you're looking for a lightweight laser then it's definitely not for you. 

Durability

What's not to love, it's White #2 steel that's easy to sharpen and takes a great edge and clad in a kurouchi finished soft iron. 

This combination has been a go-to for years because it's durable and reliable.

Ease of Care

Just follow our normal care and carbon steel care tips and you'll be good. 

We recommend an occasional dab of camellia oil to help protect the blade over time.

Our Verdict

Mutsumi Hinoura is a highly skilled blacksmith and the White #2 represents great value for money.

The finish and quality is impressive and these are great knives we'd love to be stock more of but they are in short supply and sell quickly for a reason so don't hang around if they're available!

Mutsumi Hinoura is a 4th generation blacksmith working with his famous father Tsukasa in the family workshop and is well regarded and respected for his own skill and style and the quality of his knives which are forged by hand using traditional techniques using his considerable experience gained over more than 20 years
