The steel is a mono steel that is semi-stainless so there is a chance it will patina slightly but nothing like a pure carbon blue steel for example. They are laser like knives that are incredibly thin so are best suited to softer veg and meat/fish where the knife can show off its incredible sharpness. A Japanese knife should never be used to cut through bones anyway but no hacking through butternut squash either, use your Western knife for that!

Being semi-stainless they should be kept dry between use, don't put in a dishwasher and everything should be fine!

What is a Gyuto knife?

Ranging from 180mm to 270mm the Gyuto (translates as "beef-sword") is a general purpose chef's knife that are typically quite tall at the heel and pointed towards the tip for precision work. Ideal choice for all round use.
