A purely carbon super-blue gyuto 210mm by blacksmith Takumi Ikeda.
This has been in a cupboard for ages and we have finally got round to getting on sale in the seconds section!
Made by Takumi Ikeda, renowned apprentice of the lovely Katshushige Anryu this has a core of Aogami super blue steel and has a reactive damascus cladding. Hardened to 62HRC.
*This is a used knife albeit not for long and has the start of a very slight patina (just a slight spotting, see photos), the box is fine but has a bit of a crease in the top*

What is a Gyuto knife?
Ranging from 180mm to 270mm the Gyuto (translates as "beef-sword") is a general purpose chef's knife that are typically quite tall at the heel and pointed towards the tip for precision work. Ideal choice for all round use.
