Established in 1901, Jikko knives are based in Sakai, Osaka prefecture, a city famous for knife manufacturing. As one of the oldest manufacturers Jikko have a great reputation.
They consult with chefs across Japan to find out what they need in a high quality knife and use that research to design and develop their knives.
They created, after many years of research, a special finishing method called the ‘Hatsuke’ method which they claim makes their knives even sharper and allows for greater edge retention.
