First Impressions

Testing Yoshikane Hamono knives is easy, their reputation, experience and skill is such that you can be comfortable knowing that their knives are of the highest standard and that the level of sharpness straight out of the box will be top notch. 

This knife is no exception and you'll love it from the moment you make that first cut.

Beauty

What an absolutely stunning knife. The kurouchi finish is very subtle and smooth and the tsuchime marking is like raindrops flashing across the length of the blade. 

This has to be up there with some of our all time favourite knives when you look at the finish and design! 

In Hand

Again, you can rely on Yoshikane Hamono knives to be well balanced and finished. In hand the blade is well finished and the spine and heel are subtly rounded for comfort and the reasonably light octagonal Styphnolobium Japonicum (Japanese Pagoda Tree) handle from Yoshikane is a stylish premium material and understated choice to pair with the blade.

Durability

The White #2 core clad in a stainless steel is a commonly used and robust pairing that's easy to work with and care for and will take an edge quickly so it's a nice option for daily use.

The workhorse profile is similar to their other ranges and great for busy kitchens.

Ease of Care

Just follow our normal care and carbon steel care guidelines and this is a knife that will work for you over many years of cooking.

Our Verdict

The White #2 Kurouchi Tsuchime is really something. It's got Yoshikane's famous quality grind and finish and that finish is absolutely top notch. 

It's incredible to use and it's stunning to look at. 

Certainly it's at a keen price point where you could call it a considered purchase but if you're looking for a knife made to the highest standads that's robust, easy to care for and takes an edge quickly and has been made by one of the best regarded workshops in Japan then you're going to enjoy this one all day long.

Protection & care for this knife

The handmade leather saya for large gyuto knives is an option to protect this knife although the fit is a little loose otherwise we would recommend a gyuto sized blade guard.

Due to the thickness of the spine near to the handle there are no wooden saya currently available to fit this knife.
