First Impressions

Outstanding, it's a relatively heavy knife compared to many Japanese knives due to the full tang Western shaped handle but the overall geometry counters it very well and the excellent grind and finish quality in every aspect makes it a truly wonderful knife to own and use.


Each one is hand hammered and unique and paired with a limited edition ironwood handle from one of Japan's leading handle makers, this is an astonishingly beautiful knife no matter which part you look at. 

Kato san has created something truly special with this range.

In Hand

The less typical Western handle and full tang fit make it a heavier knife than most but it's well balanced and the shape of the excellent handle fits well in the hand and there's not a rough edge to be found anywhere.

Ease of Care

We'd recommend storing this on a rack or stand rather than in a box although largely so you can stare at it when you're not cooking. 

That said, care wise, the R2/SG2 steel is fairly low maintenance and our normal care instruction of wipe and dry after use should keep this knife in excellent condition for many years.

Our Verdict

This is an investment in quality and when you look at Kato san's background and skill, the design, fit and finish and then it's topped off with a handle worthy of the best blades we think any serious knife collector or cook would want to consider this range and those who do buy one of these knives is sure to be happy they did.
