First Impressions

Excellent value and finishing quality, the Aogami #2 from Ohishi is an ideal choice for a first forray into carbon steel at a very competitive price point.

The knives in the range boast an impressive edge out of the box and for the general use knives, the flat grind and relatively thick spine and agressive distal taper push through ingredients very smoothly.

Beauty

The very light kurouchi finish left on the stainless cladding with the subtle nashiji finish is classy and understated and running down to a polished aogami #2 core steel edge which over time will patina and darken with use. 

In Hand

One of the common features of many Ohishi knives is that typically the blade is fitted further out of the handle than most but this has the benefit of giving more finger space between the heel of the blade and handle for working in a pinch grip in particular. 

It does move the balance point a fraction forward and with the wider spine above the heel is very comfortable on the general use knives. 

This range is fitted with a D-shape shinogi rosewood handle that is technically designed to prioritise right handed use but is absoultely fine for left handers too and the blades themselves are a double bevel 50/50 grind.

Durability


The Blue #2 core has been hardened to around 62-63HRC and so offers a good level of edge retention between sharpening and with the flat grind they're a strong performer in both a home or busy professional kitchen environment.

Our Verdict

Very well made and finished knives at an impressive price point, Ohishi work with a wide range of blacksmiths and it's clear the maker of this range is a skilled artisan. With its workhorse profile and durable but performant edge the Aogami #2 are very enjoyable knives to use right out of the box. 

Definitely one to add to your shortlist if you're seeking a quality carbon steel knife that won't break the bank either as a furst knife or addition to a collection.

Ohishi is one of the brands created by Akifusa who we work with to bring various knives to you and their ambition is to design and create quailty kitchen knives and tools by working with various blacksmiths and workshops.

Thier mission and motto: ”Oishi!” - That is what people in Japan say during or after having a delicious meal. With a different spelling and meaning but a similar sounding, Ohishi is also the name of the small village near the famous Mount Fuji, where our business was started. Finally and completing, Ohishi is the motto and brand name we have selected to build up and present our individual concept and understanding of a smart and fine-tuned knife set. Our idea was to help creating Oishi meals using Ohishi knives. We succeeded.
