Perfect for a range of jobs but unlike thicker and softer steel cleavers, this is essentially a chuka bocho designed for primarily for veg prep with a harder, durable 62HRC carbon steel core.

Despite the cleaver name, we don't recommend hacking through bone with this knife and that you consider the use of it more like you would with a gyuto, santoku or nakiri.

Sentan is a H&K brand (the owners of Hatsukokoro) and the Sentan brand knives are designed and made by their partners in China.

⚠️ CARE NOTE: It is recommended to thoroughly wash the blade with soap and warm water before the first use and that this knife has a reactive carbon steel core and cladding steel.

Sent an Chinese cleaver

Tradional Chinese clever if you like them you will definitely like this one great inner core steel you can get it hair popping sharp mine came reasonably sharp but a few minutes on the stones and it was ready to kill some fruit and vegetables tomatoes never stood a chance so if you are after a Chinese clever of good Quality choose this just don't cut bones great service from cutting edge as normal

Good steel, poor finish

The knife arrived rusty and blunt. It couldn't cut through anything with a skin like peppers or tomato. Behind the edge is very thick. Once reprofiled and sharpened its a good knife but wouldn't expect this to need to be done on a £135 knife.

We're sorry to hear it's not satisfactory, yours is the first negative comment we've had about this particular knife since we started selling them and they've so far proved a popular and versatile slicer.

Not sure how it might have arrived rusty - it's a highly reactive knife but they're most certainly not rusty when we send them out. Obviously it's harder to address problems when we don't hear about them until a review is posted but if you find the knife is that bad, please don't hesitate to reach out and we can organise a return and inspect it further if it's necessary.
