Hatsukokoro Coreless Blue #2 / White #2 Damascus Gyuto 210mm
A beautiful pair of gyuto that were made to the design and specification of the president of Hatsukokoro by Nigara Hamono with who they have an excellent working relationship having collaborated on many products in recent years.
This pair of coreless gyuto were very generously offered to us on our visit to the Hatsukokoro team in November 2024.
There are just two knives available and while the general specifications are approximately the same, the finishes are quite different so they are offered as #1 and #2 and the photos on this page are of the two exact knives available.
Knife #1 is the lighter cladding finish and knife #2 is the dark kurouchi cladding finish.
