About this range

First Impressions

Made in Seki City for Hatsukokoro the Hayabusa VG10 Tsuchime is an excellent value range with a quality edge finish and profile offering performance and great looks in a very affordable package. An ideal choice for low maintenance and a first knife or addition to a collection.

Beauty

We love the subtle, irregularly sized hammer (tsuchime) finish on the stainless cladding and it runs down to the highly polished core steel and when paired with the  understated mono ebony handle we think it's a great looking knife with plenty of wow factor.

In Hand

At this price point you often find a couple of compromises to keep the production costs down hich are typically a cheaply finished handle and an unpolished spine and/or heel of the blade.

Not here. The mono ebony handle we've fitted is well made and comfortable and the spine and heel of the blades while not entirely to the level of many higher knives have been finished well enough to be comfortable in hand and use which is always a positive.

Durability

The Hayabusa VG10 is hardened to around 61 HRC which offers a good level of durability in terms of edge retention and also robustness so it's a perfect choice for a first Japanese knife, affordable addition to a collection or perhaps a gift.

Ease of Care

VG10 core steel is easy to sharpen and maintain and the stainless cladding makes the entire knife easy to look after.

We recommend following our care tips and using a Japanese knife care kit for longer term care and maintenance.

Our Verdict

Superb value all round.

Impressive geometry and edge finish quality along with a nicely polished hammer finish and ebony handle.

They're easy to look after with a good balance point between edge retention and durability ideal for a first Japanese knife or low cost addition to a collection.
