First Impressions

A classic san-mai construction of Blue #2 core steel clad with soft iron with a kurouchi blacksmith finish and across the range a well finished hollow grind profile that's very thin behind the edge and distal taper for excellent food release.

Beauty

If you're searching for traditional looks then look no further. The classic kurouch finish contrasts well with the octagonal chestnut handle and over time as the knife patinas with use, it will develop a unique character.

The Blue #2 is a great looking range for those seeking traditional style.

In Hand

In hand we find the balance point across the range is quite far forward of the heel - typically around the kanji closest to the heel thanks to the lightweight chestnut wood handle.

It makes for a nimble feel in hand even with the larger knives when using a pinch grip and is an easy to maneuver knife in a lot of prep tasks.

Durability

The heat treatment at around 62HRC provides a great balance of edge retention and durability.

Ease of Care & Maintenance Tips

This is a fully reactive carbon steel knife so we recommend following our normal care tips and as with all carbon steel knives, it's important to wash and dry them properly after use to avoid rusting.

Our Verdict

The Kaneshige Hamono Blue #2 range is made by a long established Kyushu based workshop who the brand collaborate with and thanks to the oversight of parent company Konosuke, the knives share a high level of attention to detail and finishing quality at a very competitive price point.

You get a lot of knife for your money here and the edge finish is excellent. If you're looking for a traditional construction and carbon steel knife that has a little weight in the blade but feels light in hand then this is a great range to explore.
