First Impressions

We're very excited to be able to offer this limited pair of these beautiful knives and be able to experience the high finishing standard and obvious quality running throughout both knives in the set.

Beauty

One of the first things that struck us when seeing Michael's knives for the first time was that individual style running through his work and the sweeping profiles of these blades, k-tip shape and then the understated finish on the AEB-L mono-steel offset by the rich textures of the ironwood handles is wonderful. 

As a pairing, this petty and gyuto will be knives you want to display with pride when not in use!

In Hand

Both the knives in hand have a feeling of weight which is down to a combination of tall profile (the gyuto is nearly 60mm tall) and also because of the use of the dense ironwood in the handles so they have a nice, substantial feel in hand. 

The petty has a substantial feel in hand thanks to the heavier handle but with its k-tip shape is capable of intricate work and the gyuto with its longer flat profile running from heel to the gentle sweep of the belly in the final third of the knife to the tip perfect for push cutting.

Durability

Both knives are a stainless monosteel construction made with AEB-L steel hardened to 61HRC. The AEB-L steel hits a lot of sweet spots for versatility and is being used more and more in high end knives thanks to its corrosion resistance and ability to sharpen to a very fine edge easily while still offering a good level of retention.

Ease of Care & Maintenance Tips

Our Verdict

We're absolutely delighted to be able to work with local UK makers and to be able to offer this beautiful pair of knives from Michael in a limited run of just 4 sets is an honour.

They are beautifully made and finished and represent a great opportunity to own and enjoy Japanese profile knives made by hand in the UK by a highly skilled craftsman.
