First Impressions

The knives across the HD2 range are well known for their performance - they are light, thin and boast a spectacular edge.

Beauty

Sleek and stylish they will suit perfectly if you're not a fan of intricately designed knives, they have an octagonal ho wood (with a buffalo ferrule) or a single piece laurel wa handle which can be used in either hand.

In Hand

As is usual with Konosuke, the fit and finish is always top notch and the knives sit very comfortable in the hand and the handles made by Studio Khii are every bit as well finished as the blades.

Because the blades in the HD2 line are so thin and light, it's a lovely touch to note that the handles are slightly longer than standard size to provide a better balance point in all the knives in the range.

Durability

The steel is a mono steel that is semi-stainless so there is a chance it will patina slightly but nothing like a pure carbon blue steel for example.

They are laser like knives that are incredibly thin so are best suited to softer veg and meat/fish where the knife can show off its incredible sharpness.

Ease of Care & Maintenance Tips

Being semi-stainless they should be kept dry between use, don't put in a dishwasher and everything should be fine!

For longer term care and maintenance we'd recommend a carbon steel care kit for the HD2 knives.

Konosuke is a renowned knife maker based in Sakai City, Osaka Prefecture, a region with more than six centuries of blade-making history. Founded by the fifth-generation Yamamoto family and led by Kosuke Kawamura, the brand evolved from a long lineage of expert sharpeners serving Japan’s top chefs.
