First Impressions

We love the impressive out of the box edge and stylish high quality overall finish along the blade. Paired with the classy full tang Western handle, it's got a great feel and strikes a nice balance between looks and immediate cutting performance.

Beauty

The blades look stunning and are certainly eye catching. The 17 layers of stainless steel on each side are hand ground to reveal each one in turn like tree rings.

The hammered dimples are a by product of getting the layers to bind together but leave the blade with this wonderful finish. The pakka wood handles finish it off well and make this range very attractive.

In Hand

A comfortable full tang Western handle adds a little extra weight to the knife but across the range they remain well balanced and nimble in hand.

Durability

VG10 core steel clad in stainless steel is widely used in Japanese knives because it's a strong steel capable of taking and retaining a great edge and is quick and easy to sharpen.

Combined with the sturdy Western style pakka wood handle riveted to the full tang of the knife this is a well made and higly durable range of knives.

Ease of Care & Maintenance Tips

VG10 and stainless clad steel is about as easy a combination as you will find for care, it's fully stainless and easy to sharpen and look after. Just follow ournormal care instructionsand your knife will serve you for many years.

Our Verdict

Fantastic Japanese blades paired with well made sturdy Western style yo handles pair fabulous looks and performance but with scope to refine that already impressive edge with minimal effort on a whetstone if you wish.

The Moonlit Waves is one of our all-time best selling ranges for good reason and is a perfect choice for a first knife, a great value addition to your collection and with the easy care of stainless stainless is also an excellent choice for gifting to a keen cook.

Originally renowned for producing samurai swords and precision tobacco-cutting tools during the Edo period, Sakai’s craftsmen evolved their skills into the world of kitchen knives as Japan modernised.

Today, Sakai Takayuki operates under Aoki Hamono Seisakusho and represents the collective expertise of dozens of traditional blacksmiths and sharpeners, each specialising in distinct techniques. Their extensive range spans from handcrafted carbon-steel blades forged using age-old methods to high-performance stainless and Damascus series designed for professional chefs.
