Our in-depth range review

First Impressions

Everything about these knives screams quality, you'd be right to expect that given the skill of both Nakagawa and Myojin in their respective fields and right out of the box these stunning knives boast both looks and an edge finish that's consistent and wickedly sharp.

Beauty

The damascus finish is some of the best we've seen. It's got real depth and intricate detail running down to the blue #1 core.

The knives in this collection are nothing short of works of art from two of Japan's leading craftsmen.

In Hand

The rounding of the spine and heel of the blade is perfectly done. It's comfortable and very well finished and the attention to detail covers every part of this knife.

They're paired with various premium level ebony handles to match the blade quality and as a denser wood than many others, they offer a slightly heavier feel in hand but with the larger gyutos this balances nicely and puts the balance point of the knife typically just around the heel of the blade.

Ease of Care & Maintenance Tips

Please note these knives are sold with a protective lacquer coating which gives them a rainbow colouring and we recommend you remove this before using the knife to cook with. This can be done by lightly wiping with an acetone solution and paper towel/cotton balls until the rainbow colouring is no longer visible. Rinse with warm water and soap then dry before use.

Our Verdict

This is unquestionably a sensational knife in every respect. Fit and finish are world class and the collaboration between Satoshi Nakagawa and Myojin Hamono has created something special both in looks, feel and performance.

These knives would rightfully take pride of place in any collection.
