Our in-depth range review

First Impressions

A beautifully balanced collection using the popular and durable SRS13 steel finished with a high polish level and subtle hammer marks all paired with an integral bolster style laminated wood handle.

Out of the box is a quality edge as you would expect and a traditional flat grind and relatively thin overall profile glides through ingredients.

Beauty

The blade is finished with a subtle hairline polish running down to the core and across the bulk of the cladding is a pretty unique geometric tsuchime pattern that is quite subtle but definitely offers that visual wow-factor a lot of Saji-san's knives offer.

Paired with the dark and richly patterned integrated bolster handle with its end cap we think it's safe to say that visually these knives will make an impression when you've got them on the rack or prepping meals.

In Hand

Naturally the integrated bolster design and laminated pakka wood handle will increase the weight of the knife over a more typical wa handle but it's an extremely comfortable shape and while the balance point is naturally further back (around/behind the bolster).

They're particularly comfortable and ergonomic handles and despite the heavier overall weight, still feel nimble in use.

Durability

Hardened to around 63-64HRC, the stain resistant SRS13 core steel clad with stainless is a good combination of durability and edge retention.

Ease of Care & Maintenance Tips

SRS13 is a stainless super steel that's reasonably easy to sharpen and care for if you follow our normal care instructions

For long term care, we recommend the Japanese Knife Care Kit.

Our Verdict

A quality blade with minimal taper and a traditional flat grind that cuts well and finished off with a striking handle design and unique hammer finish.

This is a range that would suit someone seeking a heavier and more significant "in-hand" feeling in thier knives but without sacrificing performance in what is still a nimble overall knife.
