The versatile kiritsuke shaped White #1 gyuto is an excellent value all rounder, perfect for a first forray into carbon steel or as an addition to a collection.

First Impressions

An elegant and well finished line of knives with a durable White #1 steel core clad in stainless steel with a subtle hairline migaki finish and nice touches like the smoothly rounded heel area and spine. 

Beauty

Understated looks for sure but one that will develop a unique look over time as the core steel patinas with use. The horizontal hairline finish on the cladding is subtle and runs down to the hazy migaki and finally shows off the almost mirror polished core steel.

In Hand

It's always nice when a knife has a little extra time spent on rounding the edge of the spine and heel, it elevates the feel of it in hand and increases the feel of comfort during use.

Durability

The shirogami #1 core clad in a stainless gives you a mix of an easy to care for blade but one that takes and holds an edge well and is quick to sharpen.

Ease of Care

You've got a carbon steel core clad in stainless steel which is a nice way to get the benefit of carbon steel and developing a patina over time while you cook but without too much hassle and worrying too much about dramatic changes in appearance and high levels of care. 

Shirogami #1 is easy to look after and sharpen if you follow our standard and carbon steel care tips and for long term care, we recommend a carbon steel care kit.

Our Verdict

An excellent value range, the White #1 has a good finish level and out of the box the sharpness is good thanks to the underlying quality geometry of flat profile and taper.

The secondary bevel finish is perhaps something a knife enthusiast would enjoy working on with a finishing stone but beyond that we like this range for the nice finishing touches and overall, each knife is one that would fit into a home or professional daily rotation with no problem.
