Shirogami White #1 Knives

Shirogami #1 steel has the highest carbon content of the three White steel variants, typically around 1.25–1.35%. This results in the hardest edge, which can be sharpened to a very acute angle for precision cutting. It provides excellent edge retention but is also the most brittle, requiring careful handling and maintenance to avoid chipping or breaking.
