Japanese double bevel knives typically need to be sharpened to around a 15 degree angle and this helpful tool gives you confidence you've got the correct sharpening angle for Japanese knives if you're learning how to sharpen your knife on a whetstone.

In the longer term as you get more comfortable sharpening on stones you may not need this accessory but it's very useful as a learning tool or even for those who just like the extra safety of knowing their angle is consistent.

Usage

Simply place the guide on the spine of your knife and the white ceramic parts glide over your whetstone as you sharpen without causing any damage to your knife or stone. This guide is recommended for knives between 35 and 55mm tall at the heel. On single bevel or smaller knives (less than 35mm tall) the angle created using this tool will not be suitable.

We recommend using a large leather strop to finish your sharpening process after you have used you whetstones.

NOTE: If you're buying either of the Japanese knife care kit or carbon knife care kits, you do not need to add this angle guide, one is included in both kits.

Great Idea, but...

...it has left scratches on an expensive Japanese knife.

A short Google search will tell you that removing scratches from an expensive knife is often more effort than its worth...

I appreciate this is largely my fault and indeed since this purchase, I've sharpened many knives on many stones without issue...the key here is that I didn't use this guide to sharpen them.

If you're tempted with this guide, tape the area you're going to attach it to and you'll be fine.

For everyone else, practice makes perfect and start on non-expensive knives...❤️

Thanks for leaving some feedback on the angle guide, I'm sorry to see the scratches on the knife. Can I clarify from the photo that the scratches down near the cutting edge were caused by the guide? I can understand how it may potentially scratch the blade nearer to the spine but I don't know how one might cause the scratches in the photo.

Snug and slick

I was impressed with the angle guide because it really fits nice and snugly onto the knives and there is a pad of what feels like teflon that slides along the stone.

Wouldn't recommend as it has scratched one of my other knives
