A wonderful all rounder, the mid-size gyuto has a thin overall profile and minimal taper giving excellent food release and a smooth and comfortable handle make it an easy choice for both home and professional kitchens.

First Impressions

An elegant mix of subtle blade and an understated but stylish chestnut handle, the Hocho Kobo collection is one of Tadafusa's most popular lines in both home and professional kitchens. 


Contemporary looks and a top class migaki hairline finish particularly for this price point. With the simple Tadafusa logo on the blade, there's no doubt these are great looking knives you'll want to show off.

In Hand

Well balanced and with a very comfortable handle, the Hocho Kobo is a joy to use in all sizes and profiles.

Across the range, we find they're deceptively light in hand - with the integrated bolster you might expect them to feel a little heavier but these knives are remarkably light and nimble. 


SLD is a high performance steel which offers a carbon like level of edge retention and performance combined with the ease of care of a very stain resistant steel so the 61HRC treated steel is a great combination of durability and edge retention.

Ease of Care

As a semi-stainless steel, SLD is perhaps as close to being stainless as you can get so caring for it is pretty straightforward if you just follow the normal care instructions for any Japanese knife.

It's also very easy to maintain and sharpen in comparison to its similarly hard and high performance carbon steel counterparts.
