SLD Steel

SLD steel is a high-performance tool steel developed by Hitachi Metals. It's similar to D2 steel but with improved toughness and wear resistance. SLD offers excellent edge retention, making it ideal for applications requiring durability and precision.

In Japanese chef knives, SLD steel is valued for its hardness (typically around 60–62 HRC) and ability to hold a sharp edge for extended periods. It’s often used in mid-to-high-end knives, offering a balance between sharpness, edge retention, and ease of maintenance. The steel also resists chipping better than some harder steels, making it practical for professional kitchen environments.
