A robust and versatile shorter gyuto ideal for a first forray into carbon steel knives or a great value addition to an existing collection!

First Impressions

We do love these, they're everything you'd want in a very well priced knife where it's more than reasonable and realistic to expect some compromises. 

Tsukasa Tokaji hand forges each of these knives individually and they come with a consistent and well finished edge that's ready to work but we'd definitely view these knives as ones you'd benefit from touching up on a whetstone for a couple of minutes just to bring that edge up a little but at these prices it's a minor job.

Beauty

A shirogami core clad in soft iron with a kurouchi finish is a classic combination widely used for many Japanese knives and it's simple and effective with the carbon core that will develop a nice patina over time and with use. 

These knives are available with a selection of handle choices (including as blade only so you can also choose one from our range of knife handles).

In Hand

A bit rough and ready around the spine and heel but again, there are compromises that must be made to make a knife at any price and at this price point you will find these types of thing are common. 

It's far from a problem and the knives overall are well made and balanced and perfectly comfortable in use.

Durability

At 61HRC, the heat treat of the Shirogami #1 core offers a good level of edge retention and the fairly flat and thicker profile offers good robustness in day to day use.

Ease of Care

It's a reactive carbon steel knife and for long term care we recommend a carbon steel care kit and to follow our normal carbon steel care instructions.

Our Verdict

The Shirogami range is definitely one for the price concious knife enthusiast, obviously there are some compromises in the finish and overall grind profile but if you're looking for a carbon steel knife that will perform well out of the box at an extremely competitive price point but that has plenty of scope to improve with a little work on a whetstone then you're in the right place. 

With a good level of hardness in the Shirogami (White #1) core steel you get good edge retention, easy sharpening and with minimal work you can elevate the performance significantly should you wish.
