A dark brown and black octagonal rosewood handle in a traditional style combined with the clean, hairline migaki finish of the blade gives a lovely contrast. The slightly sweeping heel creates a unique signature look.

Durability

Chromax is a semi-stainless tool steel used across the Koutetsu range, similar to R2 powdered steel, with excellent edge retention but with a slightly tougher feel. It's typically hardened to around 62 to 63 HRC, offering excellent edge retention and a very keen edge, while feeling a little tougher and more forgiving than some very high-hardness powdered steels.

Ease of Care & Maintenance Tips

As a semi-stainless steel, Chromax is more corrosion resistant than traditional carbon steel, though it isn't fully stainless, so the blade should be wiped dry during use and cleaned promptly after acidic ingredients. It will patina fairly quickly, but the gap between patina and rust is wide enough to make it easy to care for with normal hand washing and drying and for long term maintenance we'd recommend our carbon steel care kit bundle.

Koutetsu

Koutetsu knives are the creation of master sharpener Takayuki Shibata, an integral figure in modern Japanese knife making.

Based in Hiroshima, Shibata began his career as a professional sharpener, earning a reputation for producing remarkably consistent, razor-sharp edges. His deep understanding of steel, edge geometry and finishing led him to establish his own brand, Koutetsu – named after Japan’s first iron clad battleship, symbolising strength, innovation and craftsmanship.

Each Koutetsu knife is made in collaboration with skilled blacksmiths and finished by Shibata himself, ensuring an exceptional balance of precision, lightness and performance. Known for their thin blades and refined cutting feel, Koutetsu knives are instantly recognisable for their flawless sharpness straight out of the box.

Beyond his own brand, Shibata is also a key figure in the Japanese knife world, with his own Masakage brand and supporting the distribution of Kurosaki Knives. His work represents the pursuit of perfection in every way.
