Koutetsu Chromax
The Koutetsu Chromax range comes from Takayuki Shibata, known for producing extremely thin, laser style Japanese knives with a strong following among cooks who want fast, precise cutting performance. Each blade is made from Chromax, a semi-stainless tool steel typically hardened to around 62 to 63 HRC, giving excellent edge retention alongside a sharpening feel closer to carbon steel than a typical stainless alloy.
