Who is Teruyasu Fujiwara?

Teruyasu Fujiwara is a fourth-generation blacksmith working out of Tokyo, from a family that has been making blades since 1870. It started with swords and tools, then shifted toward kitchen knives, and over the decades the Fujiwara name has quietly become one of the most respected in the craft worldwide.

What makes these knives stand out

Fujiwara's reputation is built largely on his work with high-carbon steels, particularly Aogami Super Blue. His heat treatment of that steel is considered some of the best anywhere, producing blades that take a very sharp edge and keep it through regular use. Every knife is hand-forged in his Tokyo workshop, and you can tell. These are not factory knives with a handmade story attached.

They are working tools made by someone with serious metallurgical knowledge and a lot of accumulated skill. The kurouchi finish on many of his blades also gives the reactive steel some protection from moisture, which makes day-to-day use a little more forgiving without losing any of that handmade character.

Knife types available from Teruyasu Fujiwara

The range covers the profiles most cooks actually need: gyuto, nakiri, santoku, petty and sujihiki. If you are looking at gyuto knives for general chef work, or Japanese vegetable knives for dedicated prep, Fujiwara has solid options in both. His petty knives are a good way in, with sizes to suit those browsing blades in the 120 to 134mm range or slightly longer options in the 135 to 150mm category.

Who should buy a Teruyasu Fujiwara knife?

  • Professional chefs who want a high-performance carbon steel knife with serious edge retention
  • Enthusiasts comfortable caring for reactive Aogami Super Blue steel blades
  • Anyone who wants a hand-forged knife with genuine history behind it
