Japanese double bevel knives typically need to be sharpened at a 15 to 16 degree angle and this helpful tool gives you confidence you've got the correct angle if you're learning how to sharpen your knife on a whetstone.
In the longer term as you get more comfortable sharpening on stones you may not need this accessory but it's very useful as a learning tool or even for those who just like the extra safety of knowing their angle is consistent.
Usage
Simply place the guide on the spine of your knife and the white ceramic parts glide over your whetstone as you sharpen without causing any damage to your knife or stone. This guide is recommended for knives between 35 and 55mm tall at the heel. On single bevel or smaller knives (less than 35mm tall) the angle created using this tool will not be suitable.
We recommend using a leather strop to finish your sharpening process after you have used you whetstones.
