About this range

First Impressions

A classic line from one of Japan's high profile makers, the Fujitora DP is a no-fuss, quality range of knives at an excellent price point. Used widely both at home and in professional kitchens they're a great workhorse that's easy to look after and sharpen.

Beauty

Classy looks and a refined finish the vertical hairline on the cladding steel runs down to the polished core steel to make a very stylish looking knife and with the integrated bolster and full tang black pakka wood handle, the DP is a great looking knife to show off on your rack or block when not in use.

In Hand

With the integrated bolster and relatively large pakka wood yo handle the balance point on the DP range generally tends to be around the bolster on all the knives and in hand it lends itself to being quite nimble and easy to manoeuvre around your ingredients. 

The handle is also relatively large and with the knives being a bit heavier than a wa-handled counterpart, they're comfortable in use for extended periods of time.

Durability

The VG10 core on the DP line offers a good level of hardness and edge retention and at around 60HRC, while not being as hard as some other steels this does give a little more robustness (although obviously still take care when cutting!).

It'll still take an edge quickly and easily and is a solid and common steel choice for many knives for this reason.

Ease of Care

Follow our normal care instructions and this is a knife that will serve you well for many years as it's a stainless core clad in stainless steel so there's not too much to worry about here.

Our Verdict

The Tojiro DP line is excellent value particularly for anyone looking at a fuss free entry into the world of Japanese knives, a gift for a keen cook or someone perhaps looking to add another knife to an expanding collection for different jobs.

The stainless cladding and VG10 core are easy to look after and sharpen and the yo-handle and weight are more familiar for those used to Western chef knives.
