Simon Maillet
A true collectors piece from one of our favourite independent blacksmiths Simon Maillet.
We've had the pleasure of spending time with Simon in his Sheffield workshop and he was kind enough to make this wonderful knife for us before he moves back to his native France and what a treat this latest model from his "Trash knife" project is.
With a long flat profile, beautiful taper and thin tip, Simon's knives are exceptional performers and this model is one of his latest experiments showing off a deep etched "twisted" design and kasumi finish paired with a classy single piece walnut handle.
This is a knife that's extremely lightweight for the size and the height at the heel offers additional clearance for larger ingredients.
The "Trash Knife" is an extension of Simon's philosophy that re-using, recycling and transforming existing materials are a core his of craft as a knife maker and so he spends time searching for materials to use in his work including the cladding material for this particular knife which came from farm equipment in Scotland.
