Konosuke Sanjo SKD Gyuto 240mm
A limited edition mid-sized gyuto made to the highest standards for Konosuke and paired with a top class handle and a truly unique saya with each one.
First Impressions
The sharp eyed among you will likely recognise the style, shape and finish as a classic Sanjo knife and these superb knives are the result of a partnership between Konosuke and one of Japan's finest makers so boast a superb edge, distal taper, finish and a classic workhorse profile all elevated by the magnificent and completely unique "Tairiku" saya and magnolia and white buffalo handles.
Beauty
The SKD oozes style, the nashiji finish running down to the lightly polished core steel is simple and classy and much like many Konosuke knives, the handles fitted are longer than typical and their magnolia and white buffalo bolster handles are a worthy compliment to such a great blade.
When it comes to the saya, these are works of art, they're called "Tairiku" which translates to continent and is inspired by the coastlines of countries you'd see on a map. They are the ultimate way to store your knife when not in use and each one is completely individual and unique.

In Hand
Extremely well balanced and comfortable, we're big fans of the slightly longer and thinner Konosuke handles in general and this is a knife made to the highest standards. It's an unmistakably top quality blade that feels comfortable and nimble in hand.
Durability
The core SKD steel is a durable and popular choice among many blacksmiths and retains an edge well. The stainless cladding with its nashiji finish protects the core nicely and you'll be using this knife for many years.
Ease of Care
While it is a reactive carbon steel core, the SKD is not hugely reactive compared to some carbon steels and so it's a good balance point between stainless and a highly reactive carbon steel.
SKD is fairly easy to sharpen and care for and as long as you follow the standard care instructions it's generally quite low maintenance thanks to the stainless cladding.
Our Verdict
Stunning limited edition collectors pieces based around blades from one of the best workshops around, these knives are beautiful in every respect. From the classic workhorse profile, distal taper and fine edge then paired with a top quality handle and the completely unique saya for each one that are works of art.
Only available in very small batches, we're delighted we were able to get some of these wonderful knife and saya pairings from one of our favourite makers!
