A beauty of a tall santoku handmade in one of the last workshops in Tokyo, this one wants to be your new everyday knife.

 

First Impressions

Right out of the box, these are well finished and impressively sharp and feel light in hand.

Beauty

Sometimes you open the box and your heart skips a beat. You can just see right away that a knife is one that resonates with you and you can tell it's going to perform beautifully. 

For James, this is what Goko Hamono's knives are like. They're rustic, made and finished by hand and you can just feel a connect there. The nashiji finish is subtle and the angled wenge handle just adds a little pizzazz!

In Hand

Nice and tall but still light and nimble with a heel that butts up quite close to the handle which makes that pinch grip nice and comfortable and gives you a little to hold on to and reacts quickly to small movements when you're cutting.

The angled wenge handle is also available to buy separately.

Durability

White #1 clad in stainless offers good edge retention and durability and at approximately 60-61HRC it's a good balance of being hard and robust. 

As above, this is a great every day knife.

Ease of Care

It's also easy enough to care for if you store it correctly and just follow our normal care and carbon steel care tips. 

Our Verdict

At this price point, it's hard not to be excited! 

These are handmade in extremely small quantites in a small family workshop and are a great example of what Japanese knives are all about. 

They've got the looks, they have the quality finish, style and a great cutting edge. Overall, a super knife and they don't tend to come around very often so don't hang around!
