About this range

First Impressions

The blue #2 is are some of Mutsumi san's most in demand knives and they're stunning. Right out of the box, the edge is excellent as you'd expect and the migaki finish across the blade and subtle rounding of the heel and spine just ooze class.

Beauty

Refined is perpahs the best word here. The migaki finish is subtle, the large kanji stand out a mile and the beautiful burnt chestnut and black buffalo oval handle just work together. 

The knives in this collection are subtle at a distance but up close, the quality of the finish is top notch, in keeping with Mutsumi san's high reputation.

In Hand

The oval handle with the subtle texture and smoothly finished blade around the heel and spine are a joy to hold. They're well balanced and at the heel they're quite thick and taper a little where you'd pinch grip but then retain a fairly consistent width before tapering quickly at the tip.

Durability

The Blue #2 steel clad in stainless is a common and popular combination with many blacksmiths and workshops for its robustness and hardness creating a quality edge that will retain it's sharpness well and is easy to sharpen.

Ease of Care

It's a carbon steel so just follow our carbon steel care tips and store it properly and this is a knife that's designed to last and be used for a lifetime.

We do recommend regular honing with a ceramic rod and applying some camellia oil to the blade from time to time to help protect the blade.

Our Verdict

We're always excited to see knives like these because they're made in small quantities and availability is often limited. 

Mutusmi san has released a selection of excellent quality blades in this collection and for the Japanese knife enthusasts among you, this is a collection that will no doubt be on your shortlists because it's a quality steel, fit and finish and made by Japan's best regarded blacksmiths.
