The hankotsu is a Japanese butchery and boning knife similar to a honesuki and is designed for breaking down and deboning meat and trimming and is a little more flexible than the honesuki.

Please note that while the knife can be used by left and right handers, it is initially ground 90/10 in favour of right handed use. This knife is made of a SKD12 monosteel and so is slightly reactive steel.
