First Impressions

An excellent fit and finish from one of Sakai Kikumori's flagship lines forged by Nakagawa Hamono and sharpened by Morihiro Hamono the smoothness of the cut and feel of these knives is top notch.

Beauty

The mirror polished finish on the cladding iron is good enough to see your face in while admiring the knife and the kasumi finish running down to the core steel is of an equally high standard and when paired with a simple but high quality magnolia and black buffalo horn handle everything about the Choyo line is about understated elegance and quality.

In Hand

You'll absolutely notice the effort that's gone into the finishing touches from the smooth feel of the magnolia handle to the rounded heel and spine on the knife it's comfortable to hold and cuts through food very smoothly.

Durability

The ginsan core on this version of the Choyo range offers a good balance of robustness and edge retention and is comparable to the White #2 versions (if you prefer carbon steel). 

You may find that the highly polished mirror finish needs a little more care and attention than a more rustic finish on other knives but like all knives with such a finish, this is just something to note and not a drawback.

Ease of Care

Unlike the carbon core versions available in the Choyo line, the ginsan core in this knife is stain resistant and offers a similiar level of performance to carbon steel without the worry about rusting or a patina developing if you prefer your knives to look the same after use.
