The shape of the butchers knife is designed for breaking down, portioning meat and working around bones rather than hacking through them as the edge is still relatively thin despite its imposing size.
It's also surprisingly useful for those who rock chop as the rounded shape is great for going through larger heaps of ingredients easily.
