An incredible piece of work from Kisuke Manaka, the ENN range is his highest level of knife and this large sujihiki is a magnificent demonstration of his skills.
Manaka-san's knives are all forged from scratch and by hand in his small workshop where he completes every step in the process himself.
This knife combines a Blue #1 core with a soft iron and blue #2 steel cladding finished with a polished damascus and tsuchime cladding and it's only right to pair such a blade with an equally high quality handle made from stabilised green maple with triple nickel spacers and double white buffalo bolster and heel.
We often view these knives as collectors pieces given their rarity and price but rest assured, the convex grind and smooth sweeping belly of this slicer is a high performance tool and absolutely ready for work too.
