Masamoto Sohonten have been making knives for over 150 years and are considered to be the leading sushi knife manufacturer in Japan. The quality and fit and finish of their knives is top notch.
Made from Hyper Molybdenum Vanadium and finished with a Duracon western handle these knives are made specially for the western market.
Gyuto translates as 'cow sword' and has more of a meat bias than the santoku, generally the gyutos are thinner to enable less contact with the meat (and less sticking) and in this case the gyuto 180mm has a beautiful french profile which differs greatly to the shape of the santoku. So although they are similar in measurements the profiles are very different. This gyuto is higher than others gyutos we've come across but that does give you more clearance on the board.
