Made in very small batches and completely hand forged and sharpened, the Majiro bread knife from Tanaka san is a very thin and elegant slicer designed for soft and non-crusty breads.

While primarily designed as a bread knife, this one is also very capable of doubling up to perform general slicing duties as a thin sujikihi due the non-serrated edge.

First Impressions

Thin and elegant with a classy polished migaki finish the Majiro is completely hand forged and sharpened by Tanaka san in relatively small batches.

In Hand


The Majiro is a lightweight and thin line and designed for precise cutting performance.

Durability

At around 61HRC Ginsan steel offers a carbon like level of durability and edge retention with the easy care of being stainless so it's an excellent option for home and professional kitchens. 

We would note specifically for the bread knife in this range that it is designed for slicing soft / non-crusty loaves and sandwiches and is not designed for hard breads like sourdough which may chip the edge.

Meet the maker

Shigeki Tanaka

Shigeki Tanaka is a fourth-generation blacksmith based in Miki City, Hyogo Prefecture, an area with a proud history of metalworking and blade production. His family began forging traditional farming tools during the Meiji era, and Shigeki has continued that legacy with a focus on producing high-quality kitchen knives that reflect both heritage and modern craftsmanship.

After training at Takefu Knife Village in Fukui, Tanaka returned to his hometown to develop his own style of knife making. His blades are known for their balance, performance and striking finishes, often featuring elegant damascus patterns or mirror-polished surfaces. Each knife showcases his deep understanding of steel and heat treatment, honed through years of experience at the forge.

Working with steels such as Blue #2, Ginsan and SG2, Tanaka crafts knives that combine traditional Japanese techniques with contemporary precision. His workshop remains small and hands-on, producing blades admired by chefs and collectors around the world.
