A beautiful right handed, single bevel yanagiba perfectly crafted for long slicing required in fish preparation, this is an excellent size for use in smaller kitchens and workspaces.

This knife is fitted with an octagonal ebony and black buffalo horn handle.

About this range

First Impressions

The single bevel range is designed specifically for right handed use only and the sharpness out of the box is superb.

Beauty

Not just functional, it's also beautiful. On one side is an intricate pattern and the exposed layering as the single bevel tapers down to the cutting edge and on the back is the functional and undecorated size that does the work.

In Hand

It's the small detail that often elevates a knife and one of the nicest touches we note on this range is that the edge of the heel on the patterned side has been rounded off ever so slightly to aid comfort and so when you're using a pinch grip in particular you can feel the smoothness in that heel notch area of the knife. 

A lovely touch and just speaks to the overall quality of the blade and skill of Yoshihiro san. 

Durability

Blue #2 clad in stainless is commonly used combination designed to pair durability and edge retention with easy sharpening between uses so it's going to be a solid steel pairing to last a long time. 

Ease of Care

The Blue #2 will develop a patina with use so care instructions for reactive steel can be found in our carbon steel care page.

Our Verdict

It's a very well made and finished knife and the design and production is based on the same knives Hideo Kitaoka has been making for many years and has now passed to his highly skilled apprentice.
