About this range

First Impressions

An excellent fit and finish from one of Sakai Kikumori's flagship lines forged by Tanaka Hamono and sharpened by Morihiro Hamono the smoothness of the cut and feel of these knives is top notch.

Beauty

The mirror polished finish on the cladding iron is good enough to see your face in while admiring the knife and the kasumi finish running down to the core steel is of an equally high standard and when paired with a simple but high quality magnolia and black buffalo horn handle everything about the Choyo line is about understated elegance and quality.

In Hand

You'll absolutely notice the effort that's gone into the finishing touches from the smooth feel of the magnolia handle to the rounded heel and spine on the knife it's comfortable to hold and cuts through food very smoothly.

Durability

The Blue #1 steel core is treated to a high level of hardness (63-64HRC) and so offers exceptional edge retention and durability.

Ease of Care

We recommend you follow our carbon steel care tips for maintaining your knife and for long term care a carbon steel care kit is recommended.

You may find that the highly polished mirror finish needs a little more care and attention than a more rustic finish on other knives but like all knives with such a finish, this is just something to note and not a drawback.

Please note: All knives in the Choyo line are finished with a lacquer coating (which you will see in the photos as either streaks or a rainbow colouring) which is used to protect the finish and should be removed before use.
