A stunning gyuto from Simon with a long flat profile, sensational taper and an understated but distinctive striped suminagashi finish this is a true piece of high performance craftsmanship.
This knife is one of a limited batch of Simon's "Trash project" made for us in July 2024 with a 135Cr3 core clad in soft iron salvaged from a Scottish farm and fitted with an octagonal walnut handle.
The "Trash Knife" is an extension of Simon's philosophy that re-using, recycling and transforming existing materials are a core his of craft as a knife maker and so he spends time searching for materials to use in his work including the cladding material for this particular knife which came from farm equipment in Scotland.
