About this range

First Impressions

At this price point we'd have to say that out of the box it is unexpectedly sharp compared to many knives.

Typically you might want to hone a knife a little more just to really bring up the edge but it's evident from the first cut that the expertise and finishing skill of Kajiwara san has been utilised to the fullest extent and the knife is a great performer right away.

Beauty

There are certainliy more visually stunning knives available when you look at the kurouchi finished version but the suminagashi finish on some of this range is beautiful!

In Hand

Light and well balanced with a traditional oval wa handle means the knife is easy to use and manoeuvre. 

Durability

The Blue #2 steel used in the knife will take a very fine edge and thanks to its hardness should retain that edge well and is also actually pretty easy to sharpen and maintain so this knife will last a very long time with fairly minimal maintenence.

Ease of Care

This is a fully reactive steel on both the cutting edge and in the iron cladding so will develop a patina all over the blade as you use it but it's still fairly easy to care for as long as you follow the normal rules - no dishwashers, rinse and dry after use and enjoy the patina as it develops.

Our Verdict

In short - excellent.

You're getting a well made knife and a durable steel from a very experienced blacksmith at a really competitive price. Can't say fairer than that!
