About this range

First Impressions

The Shisai SG2 is a classic Hado range boasting an incredible edge and overall finish quality but made by combining the use of machine shaped blades to both improve consistency and reduce cost which are then finished and sharpened by hand in house by the Hado team of Tadataka Maruyama, Naohiro Nomura, and Takafumi Tsuda to ensure their overall quality and performance meet their incredibly high standards.

Beauty

Hado consistently create some of the most visually stunning Japanese knives (even down to the packaging which is also thoughtfully designed and finished) and the Shiosai range is no different. 

The cladding is covered with distinctive unique tsuchime patterns and runs down to a hazy migaki finish and polished core steel edge. It's subtle but distinctive and classic Hado. 

The knives in the range are fitted with a selection of traditional wa handles.

In Hand

Very thin behind the edge and with a minimal taper the Shiosai is a lightweight and nimble knife in hand across the various sizes and shapes and the attention to detail in the finishing makes it very comfortable to hold and use for extended periods. 

Durability

Stainless cladding steel and an SG2 core is a contemporary pairing designed to be offer excellent levels of edge retention while remaining easy to care for and sharpen.

Our Verdict

With the Shiosai range, Hado have been able to deliver an exceptional performing range of knives in a quality steel with their usual high end sharpening and finishing standards but at a lower cost point because the blades are machine shaped initially which helps provide not only a consistent starting point but allows for lower overall cost.

If you're looking for a knife that boasts an excellent edge, overall fit and finish as well as subtle but unique looks and the lower care requirements of stainless SG2 steel then it's very easy to recommend this one.

Hado Knife, work with some of the finest blacksmiths in the Sakai area and then bring them in house where they're sharpened and finished by their own master sharpener Maruyama-san so they are able to provide exceptional quality knives in a wide range of styles and steels perfect for all kitchens.
