Outstanding fit and finish, this is a beautiful petty from master blacksmith Yoshikazu Tanaka.

We have this single piece and it's listed as non-standard because slightly thinner along the spine than the normal specification for this knife. In all other respects the fit and finish are in line with the Junpaku range.

What is a "non-standard" HADO knife?

HADO are well known for their exacting attention to detail, fit and finish so when we are occasionally able to source any non-standard knives, it simply means it would be a knife that doesn't exactly match the standard size, thickness or shape of the other knives in the range so you might find a slightly shorter knife, one that's a fraction thinner on the spine or with a slightly forward facing heel instead of straight. It might even be a perfect knife but just one with limited availability. 

All the knives are still made and finished to a standard HADO are satisfied with but due to these small differences they are marked as non-standard.

First Impressions

Just wow, the sharpness out of the box is excellent as with all Hado knives.

Their attention to detail and exacting standards make for exceptional knives and the Junpaku is another exceptional range from master blacksmith Yoshikazu Tanaka.

Beauty

The Junpaku is a subtle knife for sure, the delicate migaki finish on the stainless cladding runs down to the cladding line and transtions to the shirogami #1 core steel is some of the best looking we've seen. 

The richness of detail and variety of pattern from cladding to core is fantastic and as the core steel develops a patina it's only going to look better over time.

In Hand

In hand, the Junpaku again benefits from Hado's attention to detail and both the heel and spine of the knife is rounded so there are no harsh edges along the spine or heel where you're going to be holding the knife if you're using a pinch grip. 

It's smooth, comfortable and the octagonal magnolia wa handles are light and a normal size relative to the different sized knives in the range.

Durability

The shirogami #1 core clad in a stainless gives you a mix of an easy to care for blade but one that takes and holds an edge well and is quick to sharpen.

Ease of Care

You've got a carbon steel core clad in stainless steel which is a nice way to get the benefit of carbon steel and developing a patina over time while you cook but without too much hassle and worrying too much about dramatic changes in appearance and high levels of care.

Our Verdict

These are some exceptionally made and finished knives and Hado undoubtedly have some of the best attention to detail in their process which results in a knife that's obviously sharp (they all are right?!) but one that bears close scrutiny for those looking for a fit and finish where things like the rounding of the spine and heel and the overall quality of the packaging all combine to make something special. 

If you're looking to treat yourself to a great carbon steel knife then the Junpako should definitely be one on your list to consider.
