Is the Konosuke GS+ a laser knife?
There are now two profiles for the GS+, the original migaki finished knife is a very light and very thin true laser profile while the nashiji finished knives are a thicker flat ground profile more akin to a workhorse profile.
What is a Japanese knife laser profile?
There is no set criteria for what makes a knife a "laser profile" but it's generally agreed that the characteristics of the profile are that it's a very thin overall knife no more than around 2mm at the thickest part of the spine and often with a flat grind and minimal distal tapering.
