A beautiful mid size gyuto from Hado's "non-standard" collection made under their OUL house brand by Tanaka-san and sharpened by Maruyama-san.
This knife is very similar in profile and finish to HADO's Kirisame range but with a White #2 core clad in soft iron and is listed as non-standard purely because it's a limited availability item of which we have 1 available. It's finished as new and fitted with a single piece octagonal oak wa handle.
What is a "non-standard" OUL/HADO knife?
HADO are well known for their exacting attention to detail, fit and finish so when we are occasionally able to source any non-standard knives, it simply means it would be a knife that doesn't exactly match the standard size, thickness or shape of the other knives in the range so you might find a slightly shorter knife, one that's a fraction thinner on the spine or with a slightly forward facing heel instead of straight. It might even be a perfect knife but just one with limited availability.
All the knives are still made and finished to a standard HADO are satisfied with but due to these small differences they are marked as non-standard.
